Half-Hour Spanakopita (Greek Spinach and Feta Pie)

Clean the spinach and green onions thoroughly, then wash them well. Place them in a pot with a little water and bring to a boil. Meanwhile, melt the butter in a small saucepan.

In a bowl, crumble the feta cheese well with your hands. Add the dill, mint, salt, and pepper, and mix everything together.

Once the spinach has boiled, remove from heat and drain very well in a colander to remove all excess liquid. When fully drained, add it to the bowl with the feta and other ingredients, and mix everything together.

Butter a baking pan and lay down one sheet of puff pastry. Pour half of the melted butter over it. Then add the spinach and feta mixture on top.

Place the second sheet of puff pastry on top, score the pie, and pour the remaining melted butter over it. Sprinkle with sesame seeds if desired.

Bake in a preheated oven at 400°F (200°C) for 30 minutes.
