Ingredients

Serves 8 servings
  1. 4 3/4 cupsbread flour (Manitoba flour)
  2. 1 packet(about 2 1/4 teaspoons) fresh yeast
  3. 1/2 cupmilk (about 130 grams)
  4. 1/4 cupsugar (about 60 grams)
  5. 1/3 cupbutter (about 80 grams)
  6. 1egg
  7. 1 1/2 teaspoonssalt
  8. For the filling
  9. Softened butter for brushing
  10. Cinnamon
  11. Chocolate spread

Cooking Instructions

    First, prepare a starter by mixing the yeast, 3/4 cup of flour (taken from the total), and 1/2 cup of water and milk combined (taken from the total). Knead together and let rise for 2 hours until doubled in size.

    Next, prepare the dough by adding the remaining flour, sugar, and the rest of the water and milk to the starter. You can knead by hand or use a stand mixer. Add the egg and knead until you have a smooth dough, then add the butter in small pieces and the salt. The dough should be easy to work with and form a smooth ball that doesn't stick to your hands. If the dough is too soft, sprinkle with flour. Let it rise for 3 to 4 hours until tripled in size.

    Roll out the dough with a rolling pin into a rectangle as much as possible. Brush with cooled melted butter and sprinkle with cinnamon, sugar, and chocolate spread over the entire surface.

    Roll the dough tightly and cut into rolls using a knife or a string as I did. Place the rolls on a baking sheet lined with parchment paper, spaced 1/2 inch apart. Let rise for 1 hour. Bake at 350°F for 25 minutes (static oven).
