Shrimp with Cumin, Lime, and Ginger

I read once about this combination of spices and lime for shrimp. It’s quick and delicious. It’s a great appetizer or tapa. It can also be an entrée on some rice.

Ingredients

  1. 1 poundshrimp (raw or blanched), peeled and deveined
  2. 1/2 teaspoonground cumin
  3. 2 tablespoonsolive oil
  4. 3/4 teaspoongrated ginger
  5. 2large clove garlic, grated
  6. Pinchor red pepper flakes
  7. 2 tablespoonslime juice (1/2 juice lime)
  8. 1/2 teaspoonlime zest
  9. 1 1/2 tablespoonschopped cilantro
  10. Sea salt flakes

Cooking Instructions

    Rinse and dry shrimp with paper towels.

    In a large bowl, toss together the shrimp and the cumin until well coated.

    Heat the olive oil in a large skillet over medium heat. Add the shrimp to the pan in one layer and cook undisturbed for 1 minute. Flip quickly and cook for about 1 minute more.

    Stir in the ginger, garlic and red-pepper flakes, and cook for about 30 seconds, stirring to make sure the garlic doesn’t burn.

    Add the lime juice to pan and scrape up any brown bits that have formed at the bottom of the pan. Cook until the mixture is reduced by about half, about 1 minute more. Stir in the lime zest and scatter with the cilantro.

    Serve, seasoning with flaky salt.
