Grilled potatoes and rolled omelette

Ingredients

    Peel Irish potatoes and cut into halves

    Wash potatoes and strain them

  3. 3

    Rub in butter to the potatoes and add salt (you could add spices of your choice)

  4. 4

    Put the potatoes in an air fryer or oven to grill until golden brown

  5. 5

    When the potatoes is done add fresh parsley to garnish and set aside

  6. 6

    For the eggs : cut the bell peppers carrot zucchini and onions into small tiny cubes and set aside

    In another bowl break and beat 4 eggs

  8. 8

    Add little salt, coriander and curry powder

  9. 9

    Add in the cut veggies and mix well

  10. 10

    Heat a pan and add in oil

  11. 11

    Once the pan is heated you add in the eggs in batches(in thin layers), becareful not to overcrowd the egg mixture. It will make it harder to achieve the rolling

    Be patient and cook the eggs over gentle heat

    When the egg is set, fold it with a spatula gently and roll it in

  14. 14

    Pull the rolled egg to a side, and add more egg mixture to the open space to repeat until you’re done.

    Remove from pan and allow to cool before cutting it to prevent it from breaking

    Serve potatoes with eggs and tea or juice
