Sautee garlic in oil, then add beef. Stir fry until beef changes color, add black pepper, wine and soy sauce.

Simmer it until beef is tender. Then add leeks. And continue cooking until leeks are soft. Adjust taste.

I actually had this on Thursday, but it’s being published on a Sunday, the holy day of roasts.Leeks are in season at the moment, and also have the benefit of being really nice. Oniony but fresh. Cooking them in a mustard sauce basically combines the best bits of beef and mustard, and the best parts of a leek and potato pie (sans potatoes) two great, classic combinations.Easier to make this at the weekend- I had to go like the clappers to get this cooked after work to eat before 9 pm. At the weekend you can cook it slower and lower and really get the best beef.

I must admit this recipe is really for a beef pie, but the insides where so good, why not just have the insides!! I think it qualifies for stew!! You can cook the first part in a skillet but you do need a Dutch oven to complete it. It is rather fiddly to make but I guarantee you'll be happy with the results. Props to my hubby as well for the photography as usual!!
