Garnished Fried Noodles

I have always seen fast food restaurants and road side abokis whip up garnished noodles like this and have always wanted to try it out. My mom inspired me to make this since she doesn't like eating it, so to make her eat it, I tried the garnished one with the vegetables she loves using.

Cooking Instructions

Prepare your ingredients, (washing and cutting them up into sizeable sizes)
The carrot, green beans, onions, fresh pepper, green pepper and fresh tomatoes, cut up to my choice.

The noodles was put into a pot and parboiled for few minutes. And be careful not to over cook to avoid making the noodles mushy.
Then use a sieve to drain the water from the noodles

Crack the eggs and add ingredients you want to use for the eggs. Don't forget to add salt to taste.
For me, I added fresh pepper, green pepper, onions and salt to taste.

Heat up the pot and add the vegetable oil once the water in the pot is dried out.
Then fry your already mixed egg recipe.
Remove and keep in a flat plate.

Add more oil to pot but not much. Use the oil to fry your vegetables for a while; adding them one after the other
The onions first, then the carrots and green beans to make them softer then the tomatoes. Also add the seasoning of the noodles at this point for taste.

Stir the vegetables for a while then add the noodles to it gradually and stir continuously to blend in the vegetables well together with the noodles.

Once the noodles and the vegetables are well blended together, that shows your food is ready.
You are free to switch of your gas or stove.

You can serve like this if you wish

They have always hoped to have restaurant-quality dishes at home and I finally managed to make this recipe after a lot of trial and error.Fry the noodles over high to medium heat until crispy.
