Okara Cookies Made with Pancake Mix

Originally I showed 3 different ways to make these okara cookies in. They are three individual recipes in one page, so I was asked by COOKPAD staff to separate them so as not to confuse people. So, I did.
Refer to Step 4 if you need tips about drying the okara.
If you can't bring the mixture together as a dough, add 1 teaspoon and up to 1 tablespoon of milk or soy milk (not listed in the ingredients). Recipe by Nekozame
Cooking Instructions
- 1
Spread the fresh okara on a plate and dry in a microwave. Its weight will be reduced from 100 g to about 30 g.
- 2
In a 500 w microwave, heat for 5 minutes at first. When you open the door, let the steam out and stir the okara. Microwave for an additional 3 to 5 minutes.
- 3
In a 600 w microwave, heat for 3 minutes first. When you open the door, let the steam out, and stir the okara. Microwave for an additional 2 to 3 minutes.
- 4
Do not cover with cling film. When the steam accumulates inside, open the door, and let it out. It's done when it's dry and crumbly.
- 5
Heat the butter in a microwave for about 40 seconds to melt (melt completely to mix easily with the other ingredients). Add the okara and pancake mix.
- 6
Wear a plastic bag as a glove and mix the mixture until combined. Grab the mixture, turn the back inside out, and you will have the mixture inside the bag. Massage through the bag.
- 7
Mix well until the butter is evenly distributed. If you can't bring the mixture together as a dough, add a little milk or soy milk (refer to the hints).
- 8
Preheat the oven to 180°C (baking time is 15 to 20 minutes).
- 9
Roll out the dough thinly over the plastic bag, using a rolling pin. Cut the dough into your favorite shapes with a knife over the bag (this way, you don't need to wash the knife later). Open the bag.
- 10
Place a piece of parchment paper over the prepared dough and set a baking tray on top. Flip it over and you can place the dough on the parchment and tray without fail.
- 11
Bake in and oven preheated to 180°C for 15 to 20 minutes. After baking, leave the cookies inside to obtain a crispier texture. You can snap off the cookies along the lines you scored with a knife.
- 12
Make them in bulk and freeze. You can eat them anytime you want. You don't need to defrost or reheat at all. You can enjoy chilled cookies.
- 13
This is a sister recipe. I used fresh okara for moist cookies.

Okara Cookies Made With Pancake Mix Okara Cookies Made With Pancake Mix
I wrote about 3 different ways to prepare the okara pulp in my previous recipe. If the dough is too runny and difficult to come together, add 1 teaspoon to 1 tablespoon of milk or soy milk (unlisted). Because you stir the okara while dry roasting, it becomes more fine and dry than the ones in the third recipe When doubling the amount, please adjust the time for roasting since 10 minutes won't be enough to evaporate all the moisture. I thought up an easy method for making okara cookies that can be made with kids. I started out with this method, but my daughter and I experimented with different methods for making cookies as part of her summer research project, and we came up with versions 2 and 3 together. The fresh okara makes these cookies soft and moist. Adjust the cooking time so that the cookies will be as crispy as you want.I used to show all three ways of making okara cookies in one recipe, but I was instructed by COOKPAD not to put them all in one recipe, so I split them into three different recipes. Raisin Butter Pancake Mix Cookies Raisin Butter Pancake Mix Cookies
I used my family's rum butter to make cookie sandwiches. They have such an addictive deliciousness!☆ Please lightly wrap with plastic wrap in Steps 1, 6, and 9.☆ You can use regular sugar rather than powdered sugar for the butter cream if you like. I just prefer the powdered sugar to achieve a smoother texture.☆ You can buy raisins in the dry fruit section, but for rum raisins, you can also get them in the confectionery section.
