Teriyaku Pork Steaks with Shiso Vinegar Sauce

We use pork offcuts a lot in our house to make sausages, meatballs and so on. This time I tried making a pork 'steak' style dish. The sweet-salty and sour sauce goes very well with pork, and it's a hit every time I serve it to my family, so I decided to upload it.

You can use any kind of thinly sliced meat. I don't use much teriyaki sauce since I also use shiso vinegar sauce, but please adjust the amount to your taste. For 2 servings. Recipe by Renbasu

Teriyaku Pork Steaks with Shiso Vinegar Sauce

Ingredients

2 servings
  1. 200 grams● Thinly siced pork offcuts
  2. 1 dash● Salt
  3. 1as small amount ● Pepper
  4. 1/2 tbsp● Sake
  5. 1Katakuriko
  6. For the teriyaki sauce:
  7. 1/2 tbspSoy sauce
  8. 1/2 tbspMirin
  9. 1 tspSake
  10. 1 tspSugar
  11. For the shiso-vinegar sauce:
  12. 10leaves Shredded shiso leaves
  13. 1piec Finely juliennned ginger
  14. 1 1/2 tbspRice vinegar
  15. 1 1/2 tspSugar
  16. 1 dashSalt
  17. *
  18. 1Vegetable oil
  19. 1Salad (raw vegetable salad, potato salad, etc.)

Cooking Instructions

    Mix the shiso-vinegar sauces together.

    Mix the teriyaki sauce ingredients together.

  3. 3

    Cut the meat up roughly, season with salt, pepper and sake and massage in the seasonings. There's no need to cut the meat if the pieces are around 5 to 6 cm in size.

    Divide the meat into 2 portions and form into flat patties. Dust with katakuriko.

    Heat some oil in a frying pan over medium heat and fry the 2 pork patties on both sides. Turn the heat down to low, put on a lid and steam-cook until cooked through. Turn the heat up to medium-high, add the teriyaku sauce and coat the meat with it.

    Put the pork 'steaks' and salad on plates, and pour the shiso-vinegar dressing over it.
