Ingredients

  1. 2leeks, chopped
  2. 1 tspbutter
  3. 2 lbpotatoes, cubed
  4. 2-3 cupswater, depending on your preference on thickness
  5. 1 tbspchicken bullion
  6. 1 tspsalt
  7. 1/2 tspblack pepper
  8. 12 fl ozevaporated milk

Cooking Instructions

    Sauteed the leeks in melted butter until tender.

    Add cubed potatoes with the leek and cook for another 5 minutes.

    Add water, chicken bullion, salt, and pepper in the pot.

    Cover and let it cook on medium to low, stir occasionally until potatoes can be mashed with a spoon.

    Shake the evaporated milk well and add it to the soup. Stir to mix well and cook for another minute.

    You can either serve it as chunky or puree it for a creamy soup.
