This easy appetizer would make a great addition to a charcuterie spread. To reheat any refrigerated leftovers, just microwave the amount you're going to eat, about 20-30 seconds or until melty and warm. Ingredients

20 minutes
  1. 16 oz.Brie cheese wheel
  2. TOPPING:
  3. 1 T.Olive oil
  4. 3lg. Cloves garlic, finely minced
  5. 1 tsp.Fresh thyme, chopped (OR 1/4 tsp. dried thyme)
  6. OTHER:
  7. Fresh cracked black pepper, to taste
  8. Everything Bagel seasoning (optional)
  9. 1 T.Minced chives
  10. CHOOSE YOUR FAVORITE DIPPERS:
  11. Rye chips
  12. Toasted baguette rounds
  13. Pita chips
  14. Pretzels
  15. Crackers

Steps

20 minutes
  1. 1

    Preheat oven to 375°F.

    Score the top of the brie wheel in a criss-cross pattern. The white rind on the outside of the brie is 100% edible and quite delicious! Scoring the top helps the rind to be easily scooped up with the melty inner cheese after it is baked. Place brie in an oven-safe dish. If possible, use a dish with sides that's about the same size as the brie wheel.

    In a small bowl, mix together all the topping ingredients and spread over the top of the scored brie wheel. Sprinkle with the fresh cracked black pepper (and Everything Bagel seasoning, if using).

    Bake in the preheated oven for 20 minutes or until the cheese is completely melted. Sprinkle top with chives. Serve with your favorite dippers. Cover and refrigerate leftovers.

My 5 siblings and I were raised in the 1950s and 60s midwest by a major foodie dad who was a great cook. We all learned to cook at a young age. I love to cook for my 2 daughters, 7 grandkids, 8 great-grandkids, and extended family. My 4 year old great-grandson makes my day when he says "Nan sure is a good cooker!". :-). I'm trying to get all my favorite recipes saved here so my family and friends all have easy access to them even after I'm gone. My Cookpad collection is their inheritance, so I try to add my comments and memories to each recipe; that way they'll remember me with a smile when they use the recipes years from now. Recently I've called on my grandkids (all adults and avid cooks) to send me their own favorite recipes, with their prep photos, so we can collect everyone's favorites together in one place.
