Usually dried salted cod is used.
If you do have some make sure to desalt it in water changing the water often for at least 4 hours or use fresh cod like in this recipe.

Cooking Instructions

Cook the cod in water with thyme and bay leaf for 20mins
- 2
Drain, remove bones if any and flake the cod.

In a bowl make a well with the flour, add salt, pepper, yeast and finely chopped chillies without the membrane and seeds.

Incorporate one egg at a time, then the milk, it will form a dough. Add chopped parsley, chive and onion to the mix.

Cover the dough with a damp kitchen towel for 1 hour or more to allow it to rise.

Incorporate slowly the cod flakes to the dough.

Heat up the oil on medium high. Use 1 TSP of the dough and drop gently in the oil to fry. You can use a second teaspoon to remove the dough from the first.

Turn the accras over and fry until golden brown.

Put on a plate covered with kitchen towel to absorb the excess of oil
