Hamburger Vegetable Stew
Here in Florida it's been cold and then hot. Like a rollercoaster. I made this for a cold day.
Cooking Instructions

Dice the peppers, chop the cabbage, and slice the celery. Make the sure the celery is limp and washed.

Get the onions out of the jar and slice them in half.

Dice the carrots. Start browning the hamburger meat.

Add in the meatballs, bacon, spices and simmer till browned. Drain off 1 cup of drippings.

Peel and chop the potatoes. Add in the garlic. Mix and add all the vegetables except for the peas.

Stir the vegetables into the meat and allow the cabbage to cook down covered. Add in the butter and beef broth. Simmer 20 minutes covered.

As that is cooking heat the beef drippings to a skillet. When heated add in salt and pepper with the flour. Cook the flour in the drippings. Pour the roux into the stew. Stir well.

Pour in the remaining broth and cover. Allow it to bubble.

When it bubbles add the peas. Stir into the stew. Simmer 12 minutes, covered.

Allow to rest 15 minutes off the heat. Stir and serve over rice. I hope you enjoy!!!

Leftovers leftovers leftovers. I made smothered chicken last night. My recipe is on Cookpad. I used all my rice last night but I did have half a bag of egg noodles. Dug in the freezers and found frozen partial bags of peas and corn lol par for the course with me. I used my left over vegetables . One egg plant was gone half bad, used my frozen tomatoes , and add a can of black beans. You can use any can of legumes ( chickpeas , white beans, but lentils would not be a good idea, )if you don’t want to use oven you can use same pot to cook if you are too lazy or have no time. . I think putting then to oven make taste better. Rae
