Grilled Chicken Skewers with Refreshing Ume Paste

Featured on June 7, 2014! Enjoy authentic yakitori easily at home. The ume paste adds a refreshing touch. Recipe background: I wanted to enjoy chicken tender yakitori like at a yakitori restaurant.
Cooking Instructions

Remove the tendons from the chicken tenders, cut into bite-sized pieces, thread onto skewers, and sprinkle with salt.

Remove the pit from the umeboshi, chop it finely with a knife, add mirin, and microwave at 600W for 40 seconds.

Line a frying pan with parchment paper, place the chicken skewers on top, and grill over high heat until both sides are nicely browned.

Once browned, sprinkle with sake, cover with a lid, and steam for 1–2 minutes.

When the chicken is cooked through, plate the skewers, top with the ume sauce, and sprinkle with thinly sliced shiso leaves that have been soaked in water. Enjoy!
