Ingredients

8 servings
  1. halfstick butter
  2. 2 cupschicken broth
  3. 1 cupwater
  4. corn 8 large ears or 10 med
  5. 1 cupdiced sweet onion
  6. 1 1/2 cupdiced celery
  7. 5jalapeños diced, deseeded
  8. 1large red pepper diced
  9. 2large garlic cloves minced
  10. 1 tablespooneach cumin, oregano, Chipotle chili powder
  11. 1 tspeach white pepper, cayenne pepper
  12. 1tblsp chicken bouillon
  13. quarter cup flour
  14. 3.5 cupsmilk
  15. 1.5 cupshalf & half
  16. 2 cupseach smoked gouda, sharp cheddar
  17. 1 cupsour cream
  18. 2 cansblack beans drained and rinsed
  19. 2 cansdiced tomatoes with green chilies undrained. Rotel, brand
  20. 3limes 1 juiced and zested
  21. 1 bunchcilantro chopped

Cooking Instructions

    Cut the corn off the cobs,set aside.

    In a saucepan bring the broth, water and the cobs to a boil. Lower heat, simmer 30 min

  3. 3

    Melt butter, add onions, celery. Saute 4 min. Add peppers and spices. 4 minutes.

    Sprinkle flour over mixture. Stir for 2 min.

  5. 5

    Remove cobs from broth. Pour broth into stockpot. Stir until no lumps.

    Add remaining ingredients including the corn, and 1 handful of cilantro.

  7. 7

    Adjust seasonings, add salt if needed. Bring to a low boil,lower heat. Simmer for 30 minutes.

    Garnish with squeeze of lime, cilantro, sour cream, tortilla strips or crushed tostitos.

    Note to control heat, start with half the amount of spices. Adjust in step 7
