Ingredients

Serves 2 to 3 servings
  1. 1.8 ozpork belly
  2. 3.5 ozonion
  3. 1 ozcarrot
  4. 2 tablespoonsvegetable oil
  5. 2 1/2 cupswater (about 600 ml)
  6. 1 cubebouillon
  7. 2 tablespoonsfried onions
  8. 1.2 ozcurry roux
  9. 1/2 teaspooncurry powder
  10. 1/2 teaspoonsugar
  11. 1 teaspoonWorcestershire sauce
  12. 1 teaspoonmedium-thick sauce
  13. 1/4 teaspoonwhite pepper (can substitute with black pepper)
  14. 2 pinchessalt
  15. 2 pinchesinstant coffee
  16. 1/2 teaspoonvinegar

Cooking Instructions

    Slice the onion and add 2 tablespoons of oil to a pot. Sauté over medium heat until slightly browned.

    Once the onion is browned, add the carrot and pork belly.

    Add 2 1/2 cups of water, bouillon, and fried onions, and heat for 6 minutes.

    Blend the ingredients into a paste.

    Add the curry roux and curry powder. Use a simple curry roux without honey or fond de veau.

    Add Worcestershire sauce, medium-thick sauce, sugar, salt, and white pepper.

    Add instant coffee and vinegar.

    Simmer on low heat for about 5 minutes to finish.

    Fried onions are homemade. Thinly slice onions, coat with flour and butter, microwave at 600W for 1 minute, then dry-fry in a pan to finish.
