This recipe became popular on 10/06/11. I tried to recreate the taste from the soba restaurant where I worked as a student. While curry udon is the classic, curry soba is also delicious! The origin of this recipe: I discovered curry soba at the soba restaurant where I worked in high school. It was a staple meal for the staff.

Cooking Instructions

Cut the pork belly into 1 1/4 inch wide pieces. Thinly slice the onion, and cut the green onion diagonally into 1/4 inch slices.

Combine the dashi broth, mirin, and soy sauce in a pot and bring to a boil. Add the pork and onion, and once the pork is cooked through, add the green onion.

Break up the curry roux and add it to the pot from step 2. Once the roux has dissolved, add the water and cornstarch mixture and bring to a boil until thickened.

Serve the cooked soba (or udon) in a bowl and pour the curry mixture from step 3 over it to finish!
