Lotus Root and Sweet Potato Peanut Butter Salad

The origin of this recipe: I had a lotus root and sweet potato salad at an Italian bar that was incredibly delicious. When I asked what was in it, they said peanut butter! I tried to replicate it and it turned out great.

Ingredients

  1. 180 glotus root
  2. 1sweet potato (about 10 oz)
  3. 3 tablespoonsmilk
  4. 2 tablespoonsmayonnaise
  5. 2 tablespoonspeanut butter
  6. Salt and pepper to taste
  7. Black pepper to taste

Cooking Instructions

    Cut the sweet potato into bite-sized pieces and soak in water. Cook until soft using your preferred method. I microwave it in a silicone steamer at 500W for 5 minutes.

    Cut the lotus root into bite-sized pieces and soak in vinegar water (not included in ingredient list). Boil in a small pot for 5 minutes and drain.

    Mash the sweet potato in a bowl. Add milk to soften. If the sweet potato is dry, add more milk.

    Add the lotus root, mayonnaise, peanut butter, salt, and black pepper to the bowl and mix well. Serve on a plate and enjoy!
