#CA2025 I was making a birthday cake and needed a box of yellow cake mix. No yellow cake mix and it is pouring rain so I’m not going out. Yellow cake recipe to the rescue and it is a winner. I wanted a three layer cake and I am not so good with horizontal cutting so I divided the mix to three pans and cut bake time to 18 minutes.

Ingredients

Prep 10 minutes bake 30 min plus cooling
8 servings
  1. 2 1/4 cupsall-purpose flour
  2. 1 1/2 cupssugar
  3. 3 1/2 teaspoonsbaking powder
  4. 1 teaspoonsalt
  5. 1 1/4 cupsmilk
  6. 1/8 cupor 1 ounce vegetable oil
  7. 1 sticksoftened butter
  8. 1/2 tablespoonvanilla extract
  9. 3large eggs

Cooking Instructions

Prep 10 minutes bake 30 min plus cooling

    Preheat oven to 350 degrees Fahrenheit. Grease and flour 2 8” cake pans.

    Gather ingredients and let butter soften. Let milk, and eggs come to a less than ice cold temperature.

    Place butter in a large bowl or stand mixer and mix for 1-2 minutes.

    Add flour, sugar, baking powder and salt to butter and mix about 1 minute to combine.

    Add milk,oil,vanilla and eggs to dry mixture and mix on medium high 1-2 minutes.

    Pour batter into prepared pans and bake 20-25 minutes for 8 “ pans, 15-18 minutes for cupcakes and 30-35 minutes for 9x13 pan.

    Cool before frosting.
