Cucumber and Tomato Salad

This recipe is great for hot days and always a hit at bbqs......good way to use fresh veggies from the garden and very simple to throw together ahead of time :-)

Ingredients

5 servings
  1. 5 largecucumbers, sliced
  2. 210 oz containers cherry tomatoes, quartered
  3. 1/2red onion, chopped
  4. 3/4 cupsugar
  5. 1/2 cupvinegar
  6. 2 tbsplemon juice
  7. 1/2 tspsalt
  8. 1 tspfresh ground black pepper
  9. 1 tspItalian seasoning

Cooking Instructions

    Combine sliced cucumber, tomatoes and onion in a glass bowl with a lid

  2. 2

    In glass jar add remaining ingredients screw on lid and shake very well....if you dont have a jar you can use a blender or just mix but make sure it is mixed very well

    pour over the vegetables stir to coat, seal with a lid, refrigerate atleast 4 hrs or more, stir often to coat so the juices soak in

    Serve using a slotted spoon, so liquid is removed before plating.
