Ingredients

  1. 300 gramssliced sirloin
  2. 2 cupcoconut milk
  3. 1 tbspoil
  4. 2 tbspgreen curry paste
  5. 1eggplant, cut into chunks
  6. 50 gramspea eggplants
  7. 4kaffir lime leaves, deveined and torn
  8. 2 tbspfish sauce
  9. 2red spur chillies, sliced diagonally
  10. 3sprigs sweet basil leaves
  11. 1 tbsppalm sugar

Cooking Instructions

    Stir fry the beef, add 1/2 cup of coconut milk and stir over a low heat.

    Heat the remaining oil in a frying pan over a low hest and sauté the curry paste until fragrant.

    Remove any froth from the beef liquid and add the curry paste.

    Add the eggplant and simmer for 5 minutes.

    Add remaining coconut milk, fish sauce, basil, sugar, lime leaves and chillies.

    Serve with rice.
