I am a juvenile diabetic, and drinking alcohol is not good for me. When I was younger, however, I was not so wise, and drank often. One of my favorite drinks was a frozen raspberry Margarita from Chili's. Now that I am older and much wiser, I no longer drink. One day I really wanted a raspberry Margarita for some reason. That is what inspired this dish! I hope everyone enjoys this dish as much as my family, friends, and I do!

Raspberry Margarita Chicken Salad with Garlic Parmesan Croutons

One of my favorite drinks was a frozen raspberry Margarita from Chili's. Now that I am older and much wiser, I no longer drink. One day I really wanted a raspberry Margarita for some reason. That is what inspired this dish! I hope everyone enjoys this dish as much as my family, friends, and I do!

Ingredients

  1. main course, salad, chicken
  2. 2/3 cupfresh cilantro, chopped
  3. 2 tbspcoarse black pepper
  4. 2 tspgarlic powder
  5. 2 tsponion salt
  6. 1/2 cupmargarita mix
  7. 1/4 cuplime juice
  8. 1/4 cuporange juice
  9. 3 tbsptequila
  10. 3 tbsptriple sec (optional)
  11. 2 tbsphoney
  12. 1 cuplight Olive oil
  13. 5 pieceBoneless skinless chicken breasts
  14. 4 clovegarlic, minced very fine
  15. 8 ozFrench baguette
  16. 3/4 cupParmigiano-reggiano cheese
  17. 1/2 tspsalt
  18. 1 pinchcayenne pepper
  19. 1/2 cupolive oil, extra virgin
  20. 1/2 tspItalian herbs
  21. 1/2 tsppaprika
  22. 1/2 tspblack pepper
  23. 1For raspberry vinaigrette
  24. 1/2 cupraspberry vinegar
  25. 1/4 cuphoney
  26. 3/4 cupolive oil
  27. 1/2 cupfresh or frozen raspberries
  28. 1/2 cupfresh basil leaves

Cooking Instructions

    Place the cilantro, pepper, garlic powder and onion salt into a blender.

    Pour Margarita mix, lime juice, orange juice, tequila, triple sec ( optional) and honey into the blender. Puree on high speed until mixture is smooth, then reduce the speed to medium-low and slowly add the Olive oil and blend until creamy.

    Place chicken in a large Ziploc storage bag. Pour in marinade, close bag and store in fridge over night.

    After marinating the chicken over night, place chicken and marinade in a skillet and bring to a boil. Simmer on low for about 10 minutes. Remove chicken from the skillet and discard marinade. Place chicken back in the skillet and brown chicken on medium-low, about 5 minutes, until chicken is lightly browned and cooked through and is no longer pink. Can either place the chicken on the salad warm, or cool in fridge before placing on salad. Cut chicken into strips.

    Mince garlic and place garlic and olive oil in a container with tight fitting lid. Allow to incorporate for at least 4 hours.

    Preheat oven to 300℉. Cut bread into cubes; add to a large mixing bowl. Add 1/2 cup of cheese, dried herbs, paprika, salt, black pepper and cayenne. Mix well.

    Using a sieve, strain garlic oil over the bread, pressing garlic with the back of a spoon to get all the garlic juice. Toss.

    Bake for 15 minutes. Remove from oven, stir, then bake another 10-15 minutes. Remove and stir in last 1/4 cup of cheese. Allow to cool. Store in an airtight container.

    In a blender, combine raspberry vinegar, raspberries, honey and basil. Whirl 1 minute or until well blended. With the motor on, add oil in a slow stream, whirling until dressing is smooth.

    Dress up a salad with lots of beautifully colored vegetables. Top with chicken, croutons and raspberry vinaigrette. Although it is to taste, from experience, I recommend using a small amount of the vinaigrette. If too much is used, it will over power the flavor of the rest of the salad.

In the last 4 years, I have become what I believe is a hobby chef. I absolutely love food and cooking! Everyone in my family (except my son (and even him sometimes) loves the things I make (at least most of the things). To be honest, most of the food I make are other people's recipes that I have tweaked a little bit to fit my family's likings. Although I am a disabled stay at home mom of 1 nine year old 3rd grade boy, I stay very busy and always moving. Sometimes (ok most of the time) my cooking leaves quite a mess. I like to create a new recipe with multiple other recipes. My favorite one would have to be my raspberry Margarita chicken salad. I love margaritas, especially the frozen raspberry Margarita from Chili's. I thought a Margarita marinated chicken salad would taste great with a homemade raspberry vinaigrette and I was right! I plan on posting the recipe with the sites I got the recipes from soon. I really look forward to finding and posting great recipes and getting to know everyone. Happy cooking!
