(Serves 4) Wash lettuce and red mesclun and dry well in a salad spinner

Peel and slice the carrots and place in cold water

Wash the tomatoes and cut into quarters

Dice the bread and toast in a pan with 1 tablespoon of the olive oil
- 5
In a small bowl mix the rest of the olive oil, salt and pepper to make the dressing
- 6
Mix all ingredients in a medium bowl and top with dressing
- 7
