Cooking Instructions

Peel,slice and wash potatoes.

Sprinkle salt on it.

Place frying pan on the heat,when is hot and dry pour in groundnut oil.

Immediately is hot gradually add the potatoes.

Fry till is done.

Break eggs in a bowl,whisk very well add a pinch of salt.

Slice onion and tomatoes.

Heat up frying pan and add 2 teaspoon of groundnut oil.

Onces is hot,pour in the tomatoes and onion.

Fry for 2mins add curry.

Pour in the eggs.allow to fry a bit and then turn

Onces is done.serve with the sweet potatoes.

I call this an under 500 naira budget meal. This recipe was a transformation believe when I say before I hate sweet potatoes, even my boys 😄😄.But after taking sometime I realize that I can recreate the way we Fry sweet potatoes and since then I can get enough of them and I believe you will love this recipe too. You can add side dishes to it like sausage sauce, minced meat sauce and a lot more. Enjoy 😉
