Was tired of the same old Sunday breakfast, used what I had on hand and it turned out great. You can definitely switch up some ingredients to make it your own!

Ingredients

  1. 19 inch pie crust, I used pre-made
  2. 8 slicebacon, cut into 1 inch pieces
  3. 1/2 cupchopped green onions
  4. 1/2 cupchopped onion
  5. 1salt and pepper to taste
  6. pinchcayenne pepper
  7. 3eggs
  8. 2egg yolks
  9. 1 cupevaporated milk
  10. 3/4 cupmilk
  11. 1/2 tspdried thyme
  12. 6 ozCheddar/Monterey jack cheese

    Preheat oven to 325°F.

    Render bacon and remove from pan and drain on paper towels. Leave 2 teaspoons of bacon grease in pan.Add green onions, onions, salt and pepper and cayenne pepper. Cook and stir until tender and browned about 5-7 minutes then set a side.

    Whisk eggs, egg yolks, evaporated milk and milk in a large bowl. Add thyme and stir to combine.

    Sprinkle 1/3 onion mixture on the bottom of the pie crust. Top with 1/3 cooked bacon and 1/3 cheese. Ladle in half the egg mixture. Repeat.

    Bake until browned and set and no longer jiggly about 40-45 minutes. Allow to cool slightly before serving. Enjoy!

    You can really add any meat or cheese you'd like to make it your own, be careful not to add to much stuff so it all fits in the pie shell!

This looks like Quiche Lorraine... I'll have to give this version a try. It definitely looks better than the Betty Crocker recipe. :)
