  1. 3 cupRice flour
  2. 1/2 tspxanthum gum
  3. 2 cupsugar substitute, such as splenda
  4. 1 tbspground cinnamon
  5. 1 1/2 tspbaking soda
  6. 1 tspsalt
  7. 4eggs (or equivalent in egg substitute)
  8. 1 1/4 cupvegetable oil
  9. 10 ozfrozen, sliced strawberries, thawed (do not drain)
  10. 1 1/4 cupchopped walnuts

Cooking Instructions

    Preheat oven to 350°F. Grease 1 loaf pan.

    Combine flour, xanthum gum, sugar, cinnamon, baking soda, & salt.

    Whisk eggs in small bowl, then add eggs & oil to mixture. Stir just until blended.

    Fold in undrained strawberries & walnuts.

    Spoon into pan.

  6. 6

    Bake for 70 minutes. Let cool.
