Easy Mini Frittata
These are easy to make and taste great!
Cooking Instructions

Heat oven to 350

Add eggs and milk to a large bowl and scramble well with a whisk

Chop a medium zucchini or yellow squash depending on which one you like and add to the bowl

Chop a small onion and add to the bowl
- 5
Add 1/2 cup cooked crumbled bacon. I like to use the real bacon bits. It's easier.

Add 1 cup of shredded cheddar cheese
- 7
Add the garlic. You can leave it out if you don't like garlic. I personally like it.

Add the Italian seasonings

Add the salt and pepper

Stir all well

Spray a muffin pan with cooking spray

Add evenly to the muffin pan

Cook at 350 for 30 minutes

After you take out of the oven flip the frittatas out, if any stick slightly I use a butter knife to trace around the inside of the muffin pan and they usually fall right out.

Cool for 5 minutes and enjoy.

This is really easy to do and they taste great. Everything doesn't have to be exact and you can mix or substitute other ingredients as long as you keep the eggs, milk, and cheese. Left over veggies or meat work fine too.

I made this delicious Omelette Frittata because both my husband and I absolutely love it. I wanted to make something that didn’t need to much time in the kitchen, because I have also been working on some other small projects that I needed to finish asap. This is a pretty simple recipe with a variety of delicious ingredients that can be put together rather quickly, so if your in a rush try out this Frittata. 🙂When we first moved to NL I was shocked that ovens are quite small……I mean microwave small!! so as a cook this completely blew me away, and I have to admit baking is surely a huge challenge for me. If your oven is large enough then just add the eggs into the mixture and then straight into your oven. If not then do what I do toss the ready made ingredients from the skillet into a oil brushed baking pan and then add the eggs. This is a bit of extra work but at the end it is all worth it. 🙂Who knows maybe someday I will be able to afford a nice size oven, I will keep hoping 🙂 Foodzesty -

I wanted to eat a fluffy frittata. So, I made this by adapting Bill Granger's fluffy scrambled eggs.It's important to fold the eggs. It's really delicious with black pepper! But, since I have kids, I made it with white pepper. You can also use a 26 cm frying pan; however, it may be hard to get in and out of the oven and may be heavy, so be careful.
