Linzer cookies

Easy to make cookies. Almond flour and vanilla extract make these cookies a very nice treat. A cup of tea and Linzer cookies are making a perfect match. First they are going to be crispy but once u pit them in an air tight box for 1 night they r going to turn delicious and soft. :-)
Cooking Instructions
- 1
In a bowl of an electric mixer, mix the butter (room temperature) until creamy
- 2
Add the powdered sugar and mix. Than add in the same bowl, the egg yolks, vanilla extract, lemon or orange zest and mix for 2 minutes.
- 3
Add the almonds flour, baking powder and a pinch of salt. Mix!
- 4
Finally add the flour all at once. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and pit it in the fridge for 20 minutes.
- 5
Roll the dough 1/4 inch and cut 2 3/4 inch rounds with a plain or fluted cutter. With 1/2 of the rounds, cut a hole from the middle of each round with a heart or round small shape. I cut them with a star shape..
- 6
Place all the cookies on an ungreased baking sheet and chill for 15 minutes.
- 7
Bake the cookies until the edges begin to brown. Allow to cool to room temperature.
- 8
Spread apricot or strawberry jam on the flat side of each solid cookie. Dust the top of cut-out cookies with powdered sugar and press the flat sides together with the raspberry jam in the middle and the powdered sugar on the top
- 9
Enjoy them with your family!

This recipe uses vanilla sugar from a German supermarket; if you don't have vanilla sugar, you can use vanilla extract with 40g of sugar in the dough.Tasting NotesThe baked cookies are very crumbly and melt in your mouth.
