Ingredients

8 servings
  • 6 largepotatoes peeled or well scrubbed and quartered
  • 4 largeonions, peeled and sliced
  • 8 largecarrots, peeled and cut into chunks, (smaller than the potato pieces)
  • 1to 3 tablespoons butter (optional)
  • 1/4to 1 teaspoon salt (to taste)
  • 1/4to 1 teaspoon black pepper (to taste)
  • 1/4to 1 teaspoon thyme (to taste)

Steps

  1. 1

    Place the potatoes in a large saucepan and add water to cover.

  2. 2

    Layer the carrots and the onions on top.

  3. 3

    Bring to a boil.

  4. 4

    Then reduce the heat to a simmer.

  5. 5

    Cook for about 20 minutes or until the potatoes and carrots are fork tender.

  6. 6

    Drain, reserving some of the cooking liquid.

  7. 7

    Roughly mash the vegetables.

  8. 8

    Add butter if desired and salt, pepper and thyme.

  9. 9

    Add some of the cooking liquid, just enough to reach your desired consistency (I used 1/4 cup or so) and mash again.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
