Steps

Soak beans in water for at least 8 hours

Blend tomatoes, onions and garlic to form a smooth paste

Cut plantain in small cubes and chorizos in slices

In a pressure cooker, put the soaked beans (without water), the plaintain cubes, the chorizo slices, the onion and tomato paste. Peel the carrots, cut the top and add them (whole) to the cooker.

Add water until everything is 3cm below water level, add the bbq sauce and the chicken stock cubes

Start cooking on high, when pressure builds up, change to medium heat. Cook on medium for 30 minutes.

Release pressure. When all pressure is released, open the cooker and remove the carrots. Blend the carrots with a little of the cooking water and beans. Add this paste to the rest of the preparation. Mix well, add salt, pepper and cummin to taste.

Serve with rice.
