Ingredients

  1. 250 gAll-purpose flour
  2. 150 gBlue and
  3. Sugar(150g)
  4. 140 gPeanut butter(crunchy)
  5. 1/2 teaspoonBaking soda/Bicarbonate of soda
  6. 1large egg
  7. 1lemon
  8. Non grease paper
  9. 1fork
  10. 1whisk

Cooking Instructions

    In a bowl mix sugar and blueband and whisk till light

  2. 2

    Add an egg and keep whisking

  3. 3

    Add peanut butter to the mixture and whisk till it's all mixed

  4. 4

    All is mixed

    Mix flour and baking soda together then sieve over the mixture

  6. 6

    Take a grater and grate the outside part of the lemon to get lemon rinds

  7. 7

    Using a flat wooden spoon or spatula mix till all flour is incorporated and you have a thick paste

    Refrigerate for 30mins to make the dough easy to work with

  9. 9

    Reheat your oven at 200℃

    Take your baking pans and line with grease proof paper. Shape the dough into small balls(your preferred size) and place on the pan leaving space in between each other

    Using a fork, press at the middle to flatten abit the ball, then criss cross to make a crisscrossed pattern(dust the fork with flour to avoid it sticking)

    Lower the heat to 180℃ and place your cookies

    Bake for 12 mins or till Brown and set aside to cool.

    They will seem soft but air them for 20-30 mins and they will be hard and crunch

    Serve with preferred beverage

Dear Jane, I am excited to hear that we are going to have 1st Cookpad offline event in Mombasa in Jan.~! Merry Xmas-! Hope you have enjoyed the family gathering over Xmas. I am wondering if you could save your baking photos that you cooked over the Xmas holiday in your cell phone and start posting on Xmas baking contest when you are a bit more relaxed towards the end of this week so that we can feature your recipes on the contest and encourage other like-minded bakers to do the same. I would like you to also encourage other baking community members to save baking photos that they cooked during xmas holiday and post on the contest toward the end of the year.
