These cookies are really simple and very quick to make. They are a great addition to a cookie platter and perfect for an afternoon snack or lunchbox treat. They are very light and tender. They freeze great and if you heat them in the microwave just to warm them they are light with melting little chips, so good!

Ingredients

  1. 2 cupall-purpose flour
  2. 1 cupsalted butter at room temperature ( 2 sticks )
  3. 1/2 cupconfectioners sugar
  4. 1 tspvanilla extract
  5. 1 cupmini semi sweet chocolate chips
  6. 1/2 cupsemi sweet chocolate chopped

Cooking Instructions

    Preheat oven to 350. Line baking sheets with parchment paper

    Beat butter and sugar until light and fluffy

  3. 3

    Slowly add in flour until blended

  4. 4

    Add and mix in mini chocolate chips

  5. 5

    Roll into 1 inch ball and place on prepared baking sheets. Bake about 10 minutes. Cool in pan 2 minutes,then transfer to racks to cool

  6. 6

    Melt chopped chocolate

  7. 7

    Drizzle cookies with chocolate, chill just to set chocollate

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
