Ingredients

  1. 1 1/2 cupall purpose flour
  2. 1/2 tspbaking powder
  3. 1/2 tspbaking soda
  4. 1/4 tspsalt
  5. 1/2 cupunsalted butter at room temperature ( 1 stick )
  6. 1 cupgranulated sugar
  7. 1 largeegg
  8. 1/2 cupcashew butter
  9. 1/2 tspvanilla extract
  10. 1/2 cupsemi sweet chocolate chips

    Preheat oven to 350. Line cookie sheets with parchment paper.

    In a bowl, whisk flour, baking powder, baking soda and salt until blended, set aside.

    In another large bowl beat butter and sugar until light and fluffy, add egg, cashew butter and vanilla and beat until well blended. Add flour mixture gradually mixing in with rubber spatula just until blended, add cocolate chips and mix in.

    Roll batter into 1 inch balls, flatten with the tines of a fork to make a criss-cross pattern, dipping the fork in cold water if it sticks.

    Bake 13 to 18 minutes until lightly golden brown.Transfer to wire racks to cool.

    Makes about 2 dozen cookies.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
