Ingredients

  1. 200 gramsplain flour (7 oz)
  2. 1/2 tspbicarbonate of soda
  3. 115 gramsunsalted butter (4 oz)
  4. 100 gramscaster sugar (3 1/2 oz)
  5. 100 gramsunrefined light brown sugar (3 1/2 oz)
  6. 1egg
  7. 225 gramscrunchy peanut butter (8oz)
  8. 1 pinchsalt

Cooking Instructions

    Sift the flour and bicarbonate of soda together

    In a separate bowl, beat the butter and sugars until soft and creamy

  3. 3

    Combine the egg, flour mixture, peanut butter and salt

  4. 4

    Add the butter and sugar mixture, and mix until smooth

  5. 5

    Wrap the dough in foil or parchment and refrigerate for at least two hours, preferably overnight

    Pre-heat the oven to 160ºC (325ºF / Gas mark 3)

    Shape the dough into 3-cm (1 1/4-in) balls and place them 5cm (2 in) apart on baking sheets. Flatten slightly with a fork.

    Bake for 15 minutes, or until golden

    Remove from the oven and allow to cool

  10. 10

    Store in an airtight container for up to five days
