cut the onion into small pieces

sweat the onion in the pot using the olive oil

meanwhile cut all of the broccoli into small pieces

once the onions are done add half off the water to prevent them from burning. also put the stock cube into the water.

add the broccoli to the water

peel the potato and cut it into small pieces

add the potato and the rest of the water to the pot

close the lid and let it cook for about 20 minutes, stir occasionally.

once all the ingredients are soft puree the soup to the desired consistency

(Optional) cook the bacon

Tate the soup and add salt/pepper to season it
- 12
serve the soup with bacon bits and a spoonful of creme fraîche, or optionally some goat cheese for a vegetarian version
