Ingredients

  1. 2bunches beet greens with steams
  2. 1 tbspextra-virgin olive oil
  3. 2 tspminced garlic
  4. 1/4 tspcrushed red pepper flakes
  5. 1freshly ground black pepper
  6. 1salt
  7. 2quartered lemons

Cooking Instructions

    Bring a large pot of lightly salted water to a boil

  2. 2

    Add the beet greens, and cook uncovered, boiling about 2 minutes until tender

  3. 3

    Drain then immediately immerse in ice water for several minutes until cold to stop the cooking process

  4. 4

    Once the greens are cold, drain well, and coarsely chop

  5. 5

    Heat the olive oil, garlic and red pepper flakes in a large skillet over medium heat about 1 minute

  6. 6

    Add greens Cook just until greens are hot

  7. 7

    serve with lemon wedges
