I always find new and creative ways to have health proteins in my diet. Since I started being a vegan and a vegan chef, I had to find good healthy sources of proteins to keep my diet balanced. Avoiding that light headed feeling when you haven't had your protein fix for the day. So with this recipe it combines the fresh taste of coriander with the umami taste of the tomatoes and that hearty rich flavor of the chickpeas.
