I had Mexican street corn the other day that was cut off the cob and served in a bowl. It was delicious. I saw a recipe for macaroni salad made with roasted corn and the flavors of Mexican street corn. I had to try it. I was not disappointed.

I made a lot of macaroni salad, so I had a lot leftover.The mayonnaise had hardened slightly, so this dish rescued the sad leftovers.It's really just like making a regular casserole dish au gratin.My salad had tuna and broccoli in it. It also had vinegar, but you can't tell after it's been baked.You can also try adding some boiled asparagus.This time, I used a 15 cm gratin dish, a 10 cm ramekin, and a 7 cm cup. Seen already made ones at sams club and it looked good, but i wanted more so i got some croissants and a thing of chicken salad to make it . I did this for a dinner on a store day , but i also wanted to roll into lunches. This worked out great i had some lettuce I needed to use up and this was perfect for that.

One of my favorites summer macaroni salads.I substitute the celery for peas this time, and added in celery seasoning. I didn’t have any celery when making this but i did have leftovers peas from dinner that I needed to use up i made this at night to have the next day for dinner. This can just be refrigerator for a few hours or overnight. The sugar don’t skip it will bring out the taste of the crab meat better. This is very changeable recipe, can add more or less and always taste test it to see if it needs more , this batch here needs more Dukes but it took all i had , I completely over did my pasta and made to much what can i say i love pasta and I always make too much. That is definitely more than 2 cups of pasta. Oops ( i will be adding more Dukes to this batch before I sever it.

Summer is just around the corner. Time to start summer favorites. This macaroni salad packs flavor, veggies, loads of color and it's so easy to put together. Again these are staples in my house so never a need to run to the store to have a delicious side dish to your summer barbeque and summer dishes.

I just made this up. I had accidentally put to much ranch in the dressing for normal pasta salad and had dounble the noodles I needed...long crazy addition of whatever goes well with ranch and yummo!
