Coconut cream Moin Moin. (Coconut milk pudding.)

I wanted Moin Moin but with a different taste, so I tried making it with coconut cream and milk and the outcome was simply Wow. 😌
It's Super easy, Super yum and very much worth the wait.

Cooking Instructions

Put the peeled Beans, chilli pepper, red bell peppers and onions in a blender and blend till smooth.

Break coconut and cut into small pieces, put into a blended add 2 cups of water and blend till very smooth.

Pour the coconut into a pot and boil for 2 mins, then strain the milk and set aside. (Make sure, the water is not too much so the coconut milk is not watery)

Pour the mixture into a mixing bowl, add smoked fish that's washed and shredded, add grinded crayfish, seasoning cube, salt, vegetableoil and add coconut milk and stir till you get the right consistency...(Not too watery and not too thick)

Get your steaming cups ready by oiling them, pour enough mixture into it and place sliced boiled eggs, do this till all the cups are filled.

Place the cups with Moin Moin in a pot of boiling water, cover the top with foil paper and allow to steam for 30mins

After 30mins your coconut Moin Moin is ready to relish. You can eat with pap, custard, salad, Agidi or with soft home made bread
