Lemon Potato Rings

If i am going to tell you the full story of this recipe, you will end up reading a story not a recipe. But in brief, i came back from school one day and i want to make something with sweet potato. I intend to make sweet potato balls. But i think, why should'nt i try something different, something new🤔. Especially something that can be shaped well than potato balls.
I think, if i am to make something with a specific shape, i must make something like a dough first. I have to use flour to thicken, so that i can be able to cut it.
I cooked the potato and gathered all the ingredients. I like using lemon zest. I added it , willing to observe how the potatoes would taste at the end. I form a dough, cut out circles and finally decided to make holes. I did so and it looks like ring. After frying it, i observed that it do not absorb oil at all.
The family loved it. That lemon zest is so mashaAllah.
I then shared the recipe on my blog. I named it potato rings.
Fortunately, i don't know how many people tried out the recipe, but all the people that tell me they try it out, fall in love with it. I thought i and my family alone liked it.
The day i am going to do this one, reminding the tangy kick of that lemon zest, i decided to add the lemon juice itself. It was a yum.Sweetness of the potato balanced 70% of the acidic taste of lemon.
To be sincere, even if i made sauce , i like eating the potato rings alone without sauce. But it can go well with ketchup or dipping sauce.

Cooking Instructions

Squeeze lemon in a bowl, add quater cup water and set aside

Grate back of lemon using a grater. Set the lemon zest aside

Using a wooden spoon, mash the sweet potatoes in a bowl

Add the lemon water

Add lemon zest

Combine flour with baking powder, seasoning and curry powder

Combine the lemon potato and the seasoned flour together

Form a dough

Spread flour on working surface. Place the dough

Roll the dough to ¼ inch thickness

Cut out small round shapes

Cut out the holes using a small bottle cover

Heat oil in a pan and fry both sides. Remove from oil as it start changing colour

Strain

See how dry it looks. It do not absorb oil at all

For the sauce, cook fresh fish with onions, seasoning, spices and little water

Melt butter on a pan

Add onions and fry lightly, add blended scotch bonnet and tomatoe

Break fish into chunks and add. Stir and remove from heat.
