I am getting over influenced by my northern cookpad foodies too much 😁
Cooking Instructions

Slice the yam slightly thick and place on a shallow pan such that they don’t overlap

Add salt and seasoning and some water for the yam to cook for 4-5mins

Then pick out the yam and place on a sieve so it drains properly

Whisk the eggs in a bowl and add dice pepper and onions with very little salt and seasoning
- 5
Then when the yam is a bit cool and not super hot, deep yam into egg mix and deep fry in preheated vegetable oil

For the sauce

Add very little vegetable oil in a little pan and allow to heat up, then fry the diced vegetables and seasoning

Stir fry for 3-4mins
