
Curried Vegetable Soup

Cooking Instructions

Roughly chop all vegetables. In a large pot heat 2 Tbsp of vegetable oil on mediem heat. Then add the chopped onion and leek and cook for abot 3 minutes.

Add all other vegetables and cover with the vegetable stock.

Simmer on low heat for 30 minutes until all vegetables are tender. Blend or mash with a potato masher.

Add the spices and season to taste with Salt and Pepper. Serve with cream and some chopped parsley.
