Ingredients

  1. For Cake
  2. 3 cupsall purpose flour
  3. 1 cupgranulated sugar
  4. 1/4 teaspoonsalt
  5. 4 teaspoonsbaking powder
  6. 1/4 teaspoonpumpkin spice blend
  7. 1 1/2 cupswhole milk
  8. 2large eggs
  9. 4 ouncesbutter (1 stick), melted, cooled to room temperature
  10. 1 1/2 teaspoonsvanilla extract
  11. For Cinnamon Swirl
  12. 8 ouncesbutter salted1 (2 sticks), at room temperature
  13. 1 cuplight brown sugar, paked
  14. 2 tablespoonall purpose flour
  15. 1 tablespoonground cinnamon
  16. For Glaze
  17. 2 cupsconfectioner's sugar
  18. 5 tablespoonswhole milk
  19. 1 teaspoonvanilla exract
  20. 1/4 cup raisins, optional

Cooking Instructions

    Preheat the oven to 350. Spray a 9 by 13 inch pan with bakers spray

    Make Cake

    Combine flour, baking powder, salt, pumpkin pie spice and sugar in a bowl, whisk to mix

    In another bowl whisk milk, eggs and vanilla, whisk in melted butter

    Combine milk mixture with flour mixture and stir to blend

    Spread evenly in prepared pan

    Make Cinnamon Swirl

    Combine all ingredients for the topping in a bowl until well combined

    Drop topping over batter in mounds

    With a thin knife swirl thoughout batter

    Bake about 26 to30 minutes until golden and the center is set

    Make glaze

    Beat confectioner's sugar, milk and vanilla until smooth

    Glaze cake while warm

    Cut cake into sqares and serve warm. This cake is best served warm. It can be reheated in the,icrowave. It freezes well after cutting and cooling. Just wrap in indivdual sqares. Thaw and microwave just a few seconds until warm

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
