Dates Stuffed With Peanut Butter

Dates are high in fibre, which helps to slow down digestion and can prevent blood sugar level spikes. If you eat dates with some protein, such as whole nuts or nut butter, this will slow down the increase in blood sugar levels further. Therefore they pair perfectly with peanut butter!

Cooking Instructions

Take each date and using a small sharp knife carefully slit across the top and then gently pierce out the stone using your finger tips. Do this to each one. Discard the stones.

Take around a 1/2 tsp worth of smooth peanut butter and place inside the cavity of each of the dates on by one.

Sprinkle each of them with a little sea salt. Eat and enjoy or store in the fridge and pick at them throughout the day as tasty little snack.
