Sweet Potato and Apricot Simmered with Apple Juice (Macrobiotic)

I cooked this because I wanted to use up the sweet potatoes I had. I was thinking to make a dish with citrus flavour, but I found apple juice in my refrigerator, so I came up with this recipe, with great results. Of course, you can cook with orange juice instead. This is delicious even after it cools, so it is good for a packed lunch, too! I used organic apple juice.

Cooking Instructions

Use 100% apple juice.

Cut the sweet potato and apricot into bite-sized pieces.

Put the sweet potato, apricot, and apple juice in a pot.

Place a drop lid inside and simmer over the low heat.

Cook until most of moisture is gone!

Apple simmered in salt is a macrobiotic recipe, but adding sweet potato makes it taste like sweet chestnut paste. If you have time, simmering the apple well makes it soft right down to the core. The core is basically just a ball of energy.It's simply a salt simmer, but you'll be surprised by it's sweetness. When simmering the apple, if you use too much water it'll take a long time so be moderate with the amount. If it doesn't seem like enough, add a little at a time. If you don't have any Jonathan apples, Fuji apples are okay, but it may be a bit lacking in acidity so add a bit of lemon. The soup I ate tasted of seasoning and dairy products but I wanted to try making it "Ruruko"-style and made it non-dairy.I used potatoes that were a bit old so they didn't have a very high water content.
