Ingredients

  1. 1st Layer
  2. 1/2 cupmelted butter
  3. 2/3 cupcaster sugar
  4. 1egg
  5. 1/2 cupplain flour
  6. 1/2 cupself raising flour
  7. 1/4 cupbuttermilk
  8. 2nd Layer
  9. 1 cupraspberry jam
  10. 3rd Layer
  11. 2eggs
  12. 1 tbspcaster sugar
  13. 1/4 cupshredded coconut
  14. 1/4 cupdessicated coconut

Cooking Instructions

    Preheat oven to 180°c

  2. 2

    In a bowl, add melted butter and caster sugar.

    Mix together well with a wire whisk

  4. 4

    Add the egg and whisk well

  5. 5

    Add flours, stir and combine with a spatula

  6. 6

    Add buttermilk and mix well

  7. 7

    Line a square cake tin with a baking paper and pour batter in. Spread it around nicely

    Spread over the raspberry jam

  9. 9

    For 3rd layer

  10. 10

    Into a bowl, add eggs, sugar and coconuts, mix well

  11. 11

    Spread it over the raspberry and smooth out

  12. 12

    Sprinkle some more coconut on top and bake for 30-35mins

  13. 13

    Cool, slice and enjoy.
