However uncommon it may sound , it is a traditional Gujarati vegetable that is served at weddings during winter. It is a spicy green garlic ko vegetable muthiya cooked along with 3 types of beans i.e. valor dana (broad beans), tuver lilva dana ( pigeon peas ) & fresh green peas.
This is a winter speciality when all the vegetables are freshly available .
This is one of the most comforting combinations on cold winter nights.

Ingredients

30 minutes
2 serves
  1. For the beans & the peas : 👇
  2. 50 gmsbroad beans (valor dana)
  3. 50 gmspigeon peas (tuver lilva dana)
  4. 50 gmsgreen peas
  5. 1 pinchcooking soda
  6. Salt
  7. 2 tbspoil (preferably peanut oil)
  8. 1/2 tspcarrom seeds (ajwain)
  9. For the steamed methi muthiya. : 👇
  10. 2 tbspwheat flour
  11. 2 tbspbesan
  12. 1/2 cupcleaned, washed & chopped methi leaves
  13. 2 tspchopped coriander
  14. 1 tbspgreen garlic, chopped
  15. 2 tspoil
  16. 1/2 tspgreen chilli paste
  17. 1/2 tspcoriander- cumin seeds powder
  18. 1/2 tspsugar
  19. 1 pinchcooking soda
  20. 2 dropslemon juice
  21. Salt to taste
  22. 1 tsp + 1/2 tspoil for moin in muthiya + to grease the plate
  23. For the Subji : 👇
  24. 2 tspoil
  25. 1/ 2 cup spinach puree
  26. 1 tspcoriander - cumin seeds powder
  27. 1/2 tspsugar
  28. 1little salt
  29. 1 tbspgreen garlic, chopped
  30. 1/2 cuphot water
  31. Garnish - chopped green garlic

Cooking Instructions

    Wash & string the broad beans (valor) & remove the beans (dana).Do not throw away the valor. You can use it with some other vegetables eg. Valor-Ringan nu Shaak. The same way remove pigeon peas & green peas. Now sprinkle salt & a pinch of cooking soda. Rest for 5 minutes.

    Take oil in a pressure cooker, add carrom seeds & dry red chilli. Add all the 3 danas. Saute for 2 minutes in the oil. Then add 1/2 cup water & mix. Close the pressure cooker & take 3 whistles. Once the pressure is released, open the pressure cooker & remove the danas in a bowl.Keep the bowl open, do not cover the danas or they will discolor.

    Green Muthiya. : Take wheat flour, besan, chopped methi. Add green chilli paste, chopped green garlic coriander- cumin seed powder, salt,sugar, lemon juice & pinch of cooking soda. Add 1-2 tsp water & make a semi- soft dough.

    Make small balls & keep them on a greased plate. Steam them for 8 - 10 minutes. The balls will double in size. Keep aside.

    Subji : Keep spinach puree ready. Take 2 tsp of oil in a pan, add danas & spinach puree. Mix. Add steamed muthiya & a little salt, sugar, coriander - cumin seeds powder & hot water.Cook for 3 - 4 minutes.

    Serve : When the subji is ready, take it out in a bowl & garnish with chopped green garlic. Serve with Bajra Rotlas or steamed rice.
