Bataata Nu Shaak is what a potato gravy vegetable is called in Gujarati. This is a very delicious vegetable which we learnt from our Gujarati neighbour many years back.

The use of crushed roasted groundnuts gives it a unique flavour and being a no onion no garlic recipe, it can be relished by even those who refrain from having onions and garlic!

Ingredients

4-5 servings
  1. 5Medium Potatoes
  2. 1/2 tspTurmeric powder
  3. 1 1/2 tspRed chilli powder
  4. 1 1/2 tspTamarind pulp ….to be adjusted
  5. 2 tspJaggery to be adjusted
  6. 1/2 tspGaram Masala
  7. 3 tspRoasted crushed peanuts
  8. 2 tbspFresh Coriander Leaves
  9. To TasteSalt
  10. For Tempering :
  11. 2 tbspOil
  12. 1/2 tspMustard seeds
  13. 1/4 tspAsafoetida
  14. 1 sprigCurry Leaves

Cooking Instructions

    To make the Bataata nu shaak, first boil and peel the potatoes. Cut into cubes and set aside.

    Heat oil and add the mustard seeds. As soon as they splutter, add the asafoetida and the curry leaves.

    Now add the turmeric powder and chilli powder. Immediately add the cubed potatoes and mix.

    Saute and add sufficient water to cover the potatoes. Add the garam masala, tamarind and jaggery. Add salt to taste.

    Bring to a boil and add the crushed groundnuts. Simmer for a few minutes on low flame.

    Switch off the flame and garnish with chopped coriander leaves.

    Serve this delicious Batata Nu Shaak with phulkas and some steaming hot daal rice!
