Roast dry fruits in microwave for 30seconds
pulse the dry fruits for 3 to 4 times or more till you get them in small bits and pieces. don' t make a powder or paste. you can also chop them finely.. - 2
Remove the coarse mixture of dry fruits and keep aside

Heat 1 tsp desi ghee in a pan. add dates paste.
Fry till Dates and absolve all ghee - 4
Add grinding dry fruits into it

Roast khoya in slow heat but not change the colour
Add coconut powder sugar to khoya and mix well - 6
Make small balls spread on palm fill with dates mixture and shape like modak.apply vark.(optional)

The other day, when I was making Caramel to make ‘Coffee Creme Caramel’, I realised that I could make ‘Almond Toffee’ much easier. I usually cook Butter and Sugar together until the mixture turns brown, but I could cook just Sugar first, then add Butter and Almonds. I tried to make ‘Almond Toffee’ in that way and the result was almost the same. It was easier and quicker. Today I used Roasted Walnuts instead of Almonds, and it was also delicious. You might wish to double this recipe, but I recommend not to make a lot because this Toffee is actually quite dangerous. High in calories and very hard to stop eating it.

Easiest fruit salad. I got inspired by Tres Leches. I have used the milk recipe of 3 milk. The taste is amazing and it would also taste nice with Rasmalai as well. You don’t need to spend hours boiling the milk.


Spiced Nuts
I like a bit of sweetness with my spice, but not too much, and this recipe, inspired by Yotam Ottolenghi's, gets just the right balance. You can add more honey, or a sprinkle of sugar for extra crunch if you prefer a sweeter result. This is so much more economical than buying spiced nuts, and way nicer too!

When I first made Blondies, I used my ‘Brownies‘ recipe and I simply replaced Dark Chocolate with White Chocolate. It didn’t work. White Chocolate version became too wet. You would definitely need more Flour. Today I added Macadamia Nuts, that are native to Australia. You can use other nuts such as Walnuts, Almonds OR Pistachios. But Nuts are optional.
