Ingredients

4 servings
  1. 1-2Cucumber *1 large continental cucumber OR 2 smaller ones
  2. 2 tablespoonsDry Wakame
  3. 1/4 teaspoonSalt
  4. 2 tablespoonsSugar
  5. 3 tablespoonsRice Vinegar
  6. 1 teaspoonSoy Sauce
  7. Roasted Sesame Seeds

Cooking Instructions

    Thinly slice Cucumber into a bowl. I always use a vegetable slicer. Add Salt and massage, then rest for a while.

    Soak Dry Wakame in cold water until soft, drain well. Cut to small pieces if large.

  3. 3

    Combine Sugar, Rice Vinegar and Soy Sauce to make dressing. Alter the amount of Sugar and Soy Sauce to suit your taste.

    Squeeze the Cucumber to remove excess salty water, and combine Cucumber, Wakame and Dressing and mix well. If the flavour is too strong, add some water.

    Sprinkle some Toasted Sesame Seeds over and serve.
