Cod is a tasty fish on its own, but it also has the ability to absorb the flavors of accompanying foods. With rice and vegetable salsa, you get a complete meal that requires no additions.

Cooking Instructions

Fry finely chopped onion in heated olive oil until soft.

Add the pepper, cut into short strips, and the garlic, chopped with a knife. Simmer everything together for one or two minutes.

Add salsa. Simmer for another two minutes. Add rice. Add boiling water. Add water as it boils away. Simmer until rice is done. Add salt as you go.

Prepare the fish. Cut into portions, sprinkle with fish spices.

When the rice is almost done, transfer it to a deep baking dish. Add 50 ml of white wine. Chop the olives.

Place the fish pieces in the rice and tomato mixture. Sprinkle with olives. Bake in an oven preheated to 200 degrees, covered, for 10-15 minutes. Let the mixture boil.

Then remove the lid and bake for another 10 minutes.
